Coconut Flour Pancakes

Pancakes make weekends. Don't stop enjoying food because you want to lose weight. Eat the right food the right way. Try these pancakes made gluten free, and full of wholesome ingredients. Coconut flour makes them fluffy and holds a crumb similar to traditional pancakes.


Ingredients

4 eggs

1/4 cup of coconut flour

1 TBSP of Honey

1/4 cup of plain yogurt (full fat)

and butter, ghee or coconut oil for frying.

Directions

Mix all ingredients except for butter/coconut oil together.  You will notice that the coconut flour gets lumpy but don't give up keep stirring, those lumps disappear.  Over medium heat and an oiled griddle spoon tablespoon size pancakes onto the griddle.  Cook for 1 to 2 minutes on each side or until golden brown.  This recipe will serve a family of 4, it makes about 12 dollar pancakes.  These pancakes are much more filling & nourishing than regular ones and are also a great weight-loss meal.

For fun snacks make extra and put them in the fridge.  Serve them up with jams, fruit, whipped cream, or have your kid pop them in the toaster to reheat for a breakfast they can make on their own.
