Copycat Starbucks Egg Bites

These delicious egg bites are made in a bain-marie and whip up in a flash. Freeze them individually for a quick, high-protein, healthy weekday breakfast, or make them on the weekend and impress some friends for brunch.

Ingredients

8 whole eggs

1/2 cup 0% fat Skyr or blended (until smooth) cottage cheese.

1 cup grated loosely packed Gouda or Gruyere cheese

about 4 slices cooked bacon

pinch of salt and pepper

Directions

Pre-heat the oven to 350F. Prepare a kettle of boiling water for the bain-marie. You will need non-stick muffin tins and a roasting pan to fit the tray.

beat the eggs well, add the skyr and beat until smooth. Add the salt and pepper and the cheese. Fold in until well combined.

Set the muffin tin in the roasting pan, divide egg mixture evenly among 12 cups (about 1/4 cup each). Top each cup with chunky-crumbled bacon. Pour boiling water between muffin tins and roasting pan to create a bath.

Carefully! place this in the oven on the middle rack and cook for about 30-40 minutes. Remove when slightly brown and no longer runny in the middle. Remove the muffin tin from the hot bath and let cool for about 5 minutes. Remove the egg bites to a plate and serve with fresh fruit or freeze for another morning.
