curry crusted salmon

Ingredient List:

1 fillet wild salmon

1 tablespoon curry powder

1 teaspoon salt

1 lemon wedged

2 tablespoons of butter

1 bell pepper

3 scallions

1 long English cucumber

4 naan breads or 4 pitas

Plain yogurt


Direction:


Begin by slicing a fillet of salmon into slices about 4 centimeters wide.  Season with curry powder and salt on both sides.  Pat the spices into the salmon.  


Melt 2 tablespoons of butter in a frying pan on medium-high heat.  When the butter is hot, place salmon skin side down.  Let it stay in the butter until the skin is crispy and dark golden brown.  Using a spatula flip the salmon. 

While you are allowing the salmon to brown slice up a long English cucumber, chop 3 scallions and a bell pepper.

 

Place a pita or naan bread on a plate, pile high with vegetables and place 2 pieces of salmon.  Add a some plain full-fat yogurt and a wedge of lemon.  Eat as a wrap or with a fork and knife.
