No-Knead Bread



In a big bowl with a lid add 3 cups of flour, 1/4 tsp. of traditional style yeast, 1/4 tsp. of salt, and stir to combine.


Then add 1 1/2 cups of warm water (and optional 1/4 cup of oil) and mix well with either your hands or a spoon.  Its messy and sticky, but you don't knead.  Just make sure that their is no lumps, and put a lid on the bowl, or cover with plastic wrap.

Let sit for 12 or more hours.  This rest period removes the anti-nutrients from the grains and makes it tasty and easy to digest. It also adds depth of flavour to the loaf.

Dump sloppy dough out on to a floured board, shape into a loaf-ish shape and let sit.


While the bread dough is resting, turn your oven on and preheat it to 430F.  Put in a heavy lidded oven proof dish. Let that heat in the oven.

After about 15 minutes, remove the dish it's lid.  Lift the dough and plop it into the hot dish.

Put the lid on and put the bread in the oven.


Bake for 45 minutes at 450F with the  lid on, then remove the lid and bake for another 20 with the lid off.  

Remove, let cool, and enjoy with butter!
