Spiced Roasted Cauliflower

Need a satisfying side dish and still want to lose weight and stay healthy. Meet oven roasted cauliflower with exotic spices. Serve it with some plain yogurt to dip it in and you might just make this the main course.


1 head of cauliflower washed, leaves removed and head broken into 2-bite florets

1 heaping tablespoon of coriander seeds

1 heaping tablespoon of cumin seeds

1/2 teaspoon sea salt

3 TBSP olive oil


Place washed and broken cauliflower into a large bowl. Break up spices and salt in mortar and pestle, but don't turn it to powder. Pour oil and spices over cauliflower and toss. It is easiest to use your hands for this. Place on parchment lined baking sheet and bake at 380 for about 20 minutes, or until cauliflower starts to brown. Remove and serve hot. So simple!
